- 🍚1 ½ cup thick poha (flattened rice)
- 🟢¼ cup frozen peas
- 🥜¼ cup peanuts
- 🧅1 small onion, finely chopped
- 🌶️1 green chili, slit
- 🍃8 curry leaves
- 🌰½ tsp mustard seeds
- 🧡¼ tsp turmeric powder
- 🍚1 tsp sugar
- 🍋1 tbsp lemon juice
- 🌻2 tbsp vegetable oil
- 🧂 salt, to taste
- 🌿2 tbsp fresh coriander, chopped
Pro tips
- Don't over-rinse the poha; it should be soft but still hold its shape.
- Adjust green chili to your spice preference; for less heat, remove seeds.
- A dash of garam masala can add another layer of flavor if desired.
Method
- 1Rinse the poha gently under cold water for 1-2 minutes until softened but not mushy; drain well and set aside.
- 2Heat oil in a pan over medium heat, add peanuts and fry until golden; remove and set aside. Then add mustard seeds and let them splutter.
- 3Add chopped onion, green chili, and curry leaves to the pan and sauté until the onion turns translucent.
- 4Stir in the turmeric powder and frozen peas, cook for 2-3 minutes until peas are tender.
- 5Add the rinsed poha, sugar, and salt to taste. Mix everything gently until the poha is evenly coated with spices.
- 6Cover the pan and cook on low heat for 2-3 minutes, allowing the flavors to meld.
- 7Remove from heat, stir in the lemon juice and half of the fried peanuts.
- 8Garnish with fresh coriander and the remaining peanuts before serving hot.
