Ingredients

  • 🍚1 ½ cup thick poha (flattened rice)
  • 🟢¼ cup frozen peas
  • 🥜¼ cup peanuts
  • 🧅1 small onion, finely chopped
  • 🌶️1 green chili, slit
  • 🍃8 curry leaves
  • 🌰½ tsp mustard seeds
  • 🧡¼ tsp turmeric powder
  • 🍚1 tsp sugar
  • 🍋1 tbsp lemon juice
  • 🌻2 tbsp vegetable oil
  • 🧂 salt, to taste
  • 🌿2 tbsp fresh coriander, chopped

Pro tips

  • Don't over-rinse the poha; it should be soft but still hold its shape.
  • Adjust green chili to your spice preference; for less heat, remove seeds.
  • A dash of garam masala can add another layer of flavor if desired.

Method

  1. 1Rinse the poha gently under cold water for 1-2 minutes until softened but not mushy; drain well and set aside.
  2. 2Heat oil in a pan over medium heat, add peanuts and fry until golden; remove and set aside. Then add mustard seeds and let them splutter.
  3. 3Add chopped onion, green chili, and curry leaves to the pan and sauté until the onion turns translucent.
  4. 4Stir in the turmeric powder and frozen peas, cook for 2-3 minutes until peas are tender.
  5. 5Add the rinsed poha, sugar, and salt to taste. Mix everything gently until the poha is evenly coated with spices.
  6. 6Cover the pan and cook on low heat for 2-3 minutes, allowing the flavors to meld.
  7. 7Remove from heat, stir in the lemon juice and half of the fried peanuts.
  8. 8Garnish with fresh coriander and the remaining peanuts before serving hot.
