Ingredients

  • 🍚1 cup short-grain rice
  • 🍲6 cups chicken or vegetable broth
  • 🫚2 inch ginger, fresh, peeled and thinly sliced
  • 🧄2 cloves garlic, minced
  • sesame_oil½ tsp sesame oil
  • 醤油2 tbsp soy sauce
  • 🧅2 green onions, chopped
  • 🧂 salt and white pepper, to taste

Pro tips

  • For a thicker congee, cook for a few extra minutes. For a thinner consistency, add a splash more hot broth or water.
  • Experiment with toppings like shredded cooked chicken, a soft-boiled egg, or a drizzle of chili oil for extra flavor.
  • Soaking the rice for 30 minutes before cooking can help it break down faster, though it's not strictly necessary for this quick version.

Method

  1. 1Rinse the rice thoroughly under cold water until the water runs clear. Drain well.
  2. 2In a large pot, combine the rinsed rice, broth, sliced ginger, and minced garlic.
  3. 3Bring the mixture to a boil over medium-high heat, then immediately reduce heat to low.
  4. 4Cover the pot and simmer for 20-25 minutes, stirring occasionally, until the rice has broken down and the congee is thick and creamy.
  5. 5Stir in the sesame oil and soy sauce. Season with salt and white pepper to taste.
  6. 6Ladle into bowls and garnish with chopped green onions before serving.
