Ingredients
- 🍚1 cup short-grain rice
- 🍲6 cups chicken or vegetable broth
- 🫚2 inch ginger, fresh, peeled and thinly sliced
- 🧄2 cloves garlic, minced
- sesame_oil½ tsp sesame oil
- 醤油2 tbsp soy sauce
- 🧅2 green onions, chopped
- 🧂 salt and white pepper, to taste
Pro tips
- For a thicker congee, cook for a few extra minutes. For a thinner consistency, add a splash more hot broth or water.
- Experiment with toppings like shredded cooked chicken, a soft-boiled egg, or a drizzle of chili oil for extra flavor.
- Soaking the rice for 30 minutes before cooking can help it break down faster, though it's not strictly necessary for this quick version.
Method
- 1Rinse the rice thoroughly under cold water until the water runs clear. Drain well.
- 2In a large pot, combine the rinsed rice, broth, sliced ginger, and minced garlic.
- 3Bring the mixture to a boil over medium-high heat, then immediately reduce heat to low.
- 4Cover the pot and simmer for 20-25 minutes, stirring occasionally, until the rice has broken down and the congee is thick and creamy.
- 5Stir in the sesame oil and soy sauce. Season with salt and white pepper to taste.
- 6Ladle into bowls and garnish with chopped green onions before serving.
