Ingredients
- 🥣2 cup dosa batter
- 🥔3 medium potatoes
- 🧅1 onion
- 🌶️1 green chili
- 🧄½ tsp ginger-garlic paste
- ⚫½ tsp mustard seeds
- 🧡½ tsp turmeric powder
- 💨¼ tsp asafoetida (hing)
- 🍃5 curry leaves
- 🌻2 tbsp vegetable oil
- 🌿¼ cup fresh cilantro, chopped
- 🧂1 tsp salt, or to taste

- Ensure the tawa is hot enough before pouring the batter for a crispy dosa.
- Adjust green chilies and salt in the potato filling to your spice preference.
- Serve hot with coconut chutney and sambar for a complete meal.
Method
- 1Boil potatoes until tender, peel, and mash lightly. Set aside.
- 2Heat oil in a pan. Add mustard seeds, let them splutter, then add asafoetida, curry leaves, chopped onion, green chili, and ginger-garlic paste. Sauté until onions are translucent.
- 3Stir in turmeric powder and mashed potatoes. Add salt and mix well. Cook for 2-3 minutes, then stir in fresh cilantro. The potato filling is ready.
- 4Heat a non-stick tawa or griddle over medium-high heat. Lightly grease with oil. Pour a ladleful of dosa batter in the center and spread it outwards in a spiral to form a thin circle.
- 5Drizzle a little oil around the edges and cook until the dosa turns golden brown and crispy.
- 6Place a spoonful of potato filling in the center of the dosa, fold it in half, and serve hot.
