Quick Poha with Peanuts

Ingredients
- 🍚1 cup poha (flattened rice), medium thick
- 🥜¼ cup roasted peanuts
- ⚫1 tsp mustard seeds
- 🌿½ tsp cumin seeds
- 🍃8 curry leaves
- 🌶️1 green chili, finely chopped
- 🧅¼ cup onion, finely chopped
- 🧡½ tsp turmeric powder
- 🌻1 tbsp vegetable oil
- 🍋½ lemon, juiced
- 🧂 salt, to taste
- 🌿2 tbsp fresh coriander, chopped
Pro tips
- To prevent poha from becoming mushy, ensure it's not soaked, only rinsed until soft. The key is gentle hydration.
- For extra flavour, you can add a pinch of asafoetida (hing) to the oil after the mustard seeds.
- Adjust the amount of green chili to your spice preference; deseed for less heat.
Method
- 1Rinse the poha gently under running water for 1-2 minutes until soft but not mushy. Drain well and set aside.
- 2Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds and curry leaves.
- 3Add chopped green chili and onion. Sauté until the onion turns translucent.
- 4Stir in the turmeric powder and roasted peanuts. Cook for 1 minute.
- 5Add the drained poha and salt to taste. Mix gently until everything is well combined and the poha is coated with the spices.
- 6Cook for 2-3 minutes, stirring occasionally, until the poha is heated through. Do not overcook, or it will become dry.
- 7Turn off the heat. Squeeze fresh lemon juice over the poha and garnish with fresh chopped coriander.
- 8Serve hot immediately and enjoy your quick and delicious breakfast!
