  • 👃¼ tsp asafoetida (hing)
  • 🌿1 tsp cumin powder
  • 🥭½ tsp amchur (dry mango powder)
  • 🧂½ tsp chaat masala
  • 🧂 salt, to taste

Method

  1. 1Rinse the chana dal thoroughly under cold water, then soak it in fresh water for at least 4 hours or overnight.
  2. 2Drain the soaked chana dal completely and pat it very dry with a kitchen towel. This is crucial for crispiness.
  3. 3Preheat your oven to 180°C (350°F).
  4. 4In a large bowl, toss the dried chana dal with olive oil, turmeric powder, chili powder, asafoetida, cumin powder, amchur, and a pinch of salt.
  5. 5Spread the seasoned chana dal in a single layer on a baking sheet lined with parchment paper.
  6. 6Roast for 20-25 minutes, stirring halfway through, until golden brown and crispy. Keep a close eye to prevent burning.
  7. 7Remove from oven, sprinkle with chaat masala while still warm, and let it cool completely on the baking sheet before serving or storing.
