- 🫒2 tbsp olive oil
- 🧡½ tsp turmeric powder
- 🌶️½ tsp chili powder
- 👃¼ tsp asafoetida (hing)
- 🌿1 tsp cumin powder
- 🥭½ tsp amchur (dry mango powder)
- 🧂½ tsp chaat masala
- 🧂 salt, to taste

Method
- 1Rinse the chana dal thoroughly under cold water, then soak it in fresh water for at least 4 hours or overnight.
- 2Drain the soaked chana dal completely and pat it very dry with a kitchen towel. This is crucial for crispiness.
- 3Preheat your oven to 180°C (350°F).
- 4In a large bowl, toss the dried chana dal with olive oil, turmeric powder, chili powder, asafoetida, cumin powder, amchur, and a pinch of salt.
- 5Spread the seasoned chana dal in a single layer on a baking sheet lined with parchment paper.
- 6Roast for 20-25 minutes, stirring halfway through, until golden brown and crispy. Keep a close eye to prevent burning.
