- 🫒1 tbsp olive oil
- 🥘1 tsp cumin powder
- 🧡½ tsp turmeric powder
- 🌶️½ tsp chilli powder
- 🌿¼ tsp asafoetida (hing)
- 🧂1 tsp chaat masala
- 🧂 salt, to taste
- 🌿 fresh coriander, chopped (for garnish)

Method
- 1Soak chana dal in water for at least 4 hours, or overnight. Drain thoroughly and pat dry with a kitchen towel to remove excess moisture.
- 2Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
- 3In a large bowl, toss the dried chana dal with olive oil, cumin powder, turmeric powder, chilli powder, asafoetida, and salt until evenly coated.
- 4Spread the seasoned chana dal in a single layer on the prepared baking sheet.
- 5Roast for 25-30 minutes, stirring halfway through, until crispy and golden brown. Keep an eye on them to prevent burning.
- 6Remove from oven and immediately sprinkle with chaat masala while still warm.
- 7Let cool completely before serving or storing. Garnish with fresh coriander if desired.
