Roti with Ghee and Jaggery

Ingredients
- 🌾2 cup whole wheat flour
- 💧¾ cup water
- 🧂1 tsp salt
- 🧈4 tsp ghee
- 🍯4 tbsp jaggery, grated or powdered

Method
- 1In a large bowl, combine whole wheat flour and salt. Gradually add water, kneading until a soft, pliable dough forms. Cover and let rest for 10 minutes.
- 2Divide the dough into 4 equal portions and roll each into a smooth ball.
- 3Dust a rolling surface with flour and roll each ball into a thin, 6-7 inch diameter disc.
- 4Heat a tawa (griddle) over medium-high heat. Place a roti on the hot tawa.
- 5Cook for about 30 seconds until small bubbles appear, then flip and cook for another minute until light brown spots form.
- 6Flip again and gently press with a clean cloth or spatula until the roti puffs up. Cook for a few more seconds.
- 7Remove the cooked roti from the tawa. While still hot, spread 1 tsp of ghee over one side and sprinkle 1 tbsp of grated jaggery.
- 8Fold the roti in half or roll it up and serve immediately.
