Ingredients

  • 🍣450 g salmon fillets, skinless, cut into 1-inch cubes
  • 🌶️1 red bell pepper, cut into 1-inch pieces
  • 🫑1 yellow bell pepper, cut into 1-inch pieces
  • 🥒1 zucchini, cut into 1/2-inch thick rounds
  • 🧅½ red onion, cut into 1-inch wedges
  • 🫒2 tbsp olive oil
  • 🍋1 tbsp lemon juice
  • 🌿1 tsp dried oregano
  • 🧄½ tsp garlic powder
  • 🧂 salt and black pepper, to taste
  • 🥢8 wooden or metal skewers

Pro tips

  • For extra flavor, squeeze fresh lemon juice over the skewers just before serving.
  • Try adding cherry tomatoes or mushrooms to your skewers for more variety.
  • If you don't have a grill, these skewers can also be baked in the oven at 400°F (200°C) for 15-20 minutes.

Method

  1. 1If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. 2In a large bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper.
  3. 3Add the salmon cubes, red bell pepper, yellow bell pepper, zucchini, and red onion to the bowl. Toss gently to coat all ingredients evenly with the marinade.
  4. 4Preheat your grill to medium-high heat. Thread the salmon and vegetables alternately onto the soaked skewers.
  5. 5Place the skewers on the preheated grill. Cook for 10-15 minutes, turning occasionally, until the salmon is cooked through and the vegetables are tender-crisp with nice grill marks.
  6. 6Remove from the grill and serve immediately.
