Ingredients
- 🍣450 g salmon fillets, skinless, cut into 1-inch cubes
- 🌶️1 red bell pepper, cut into 1-inch pieces
- 🫑1 yellow bell pepper, cut into 1-inch pieces
- 🥒1 zucchini, cut into 1/2-inch thick rounds
- 🧅½ red onion, cut into 1-inch wedges
- 🫒2 tbsp olive oil
- 🍋1 tbsp lemon juice
- 🌿1 tsp dried oregano
- 🧄½ tsp garlic powder
- 🧂 salt and black pepper, to taste
- 🥢8 wooden or metal skewers
Pro tips
- For extra flavor, squeeze fresh lemon juice over the skewers just before serving.
- Try adding cherry tomatoes or mushrooms to your skewers for more variety.
- If you don't have a grill, these skewers can also be baked in the oven at 400°F (200°C) for 15-20 minutes.
Method
- 1If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- 2In a large bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper.
- 3Add the salmon cubes, red bell pepper, yellow bell pepper, zucchini, and red onion to the bowl. Toss gently to coat all ingredients evenly with the marinade.
- 4Preheat your grill to medium-high heat. Thread the salmon and vegetables alternately onto the soaked skewers.
- 5Place the skewers on the preheated grill. Cook for 10-15 minutes, turning occasionally, until the salmon is cooked through and the vegetables are tender-crisp with nice grill marks.
- 6Remove from the grill and serve immediately.
