Ingredients

  • 🥚2 large eggs
  • 🥛¼ cup milk or cream
  • 🍃1 cup fresh spinach
  • 🧈½ tbsp unsalted butter
  • 🧂 salt, to taste
  • 🌶️ black pepper, to taste

Pro tips

  • For fluffier eggs, add a splash of sparkling water instead of milk.
  • Don't overcook the eggs; they should be moist and creamy, not dry.
  • Try adding a pinch of cheese, like cheddar or feta, for extra flavor.
  • Serve with a slice of whole-wheat toast for a more filling meal.

Method

  1. 1In a medium bowl, whisk together the eggs, milk/cream, salt, and pepper until well combined.
  2. 2Melt the butter in a non-stick skillet over medium-low heat.
  3. 3Pour the egg mixture into the skillet. Let it cook undisturbed for about 30 seconds until the edges just begin to set.
  4. 4Using a spatula, gently push the cooked eggs from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath.
  5. 5Continue cooking and gently folding the eggs for 2-3 minutes until they are mostly set but still slightly moist.
  6. 6Add the fresh spinach to the skillet and cook, folding it into the eggs, until it wilts, about 1 minute.
  7. 7Remove from heat immediately and serve hot.
