Ingredients
- 🥚2 large eggs
- 🥛¼ cup milk or cream
- 🍃1 cup fresh spinach
- 🧈½ tbsp unsalted butter
- 🧂 salt, to taste
- 🌶️ black pepper, to taste
Pro tips
- For fluffier eggs, add a splash of sparkling water instead of milk.
- Don't overcook the eggs; they should be moist and creamy, not dry.
- Try adding a pinch of cheese, like cheddar or feta, for extra flavor.
- Serve with a slice of whole-wheat toast for a more filling meal.
Method
- 1In a medium bowl, whisk together the eggs, milk/cream, salt, and pepper until well combined.
- 2Melt the butter in a non-stick skillet over medium-low heat.
- 3Pour the egg mixture into the skillet. Let it cook undisturbed for about 30 seconds until the edges just begin to set.
- 4Using a spatula, gently push the cooked eggs from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath.
- 5Continue cooking and gently folding the eggs for 2-3 minutes until they are mostly set but still slightly moist.
- 6Add the fresh spinach to the skillet and cook, folding it into the eggs, until it wilts, about 1 minute.
- 7Remove from heat immediately and serve hot.
