Ingredients

  • 🥚1 large egg
  • 🌶️½ red bell pepper, diced
  • 🧅¼ onion, diced
  • 🧄1 clove garlic, minced
  • 🍅½ cup canned crushed tomatoes
  • 🫒½ tbsp olive oil
  • 🌶️¼ tsp smoked paprika
  • 🌿 tsp cumin
  • 🧂 salt and black pepper, to taste
  • 🌿1 tbsp fresh parsley or cilantro, chopped (for garnish)

  • For a richer flavor, add a tablespoon of feta cheese crumbled on top before serving.

Method

  1. 1Heat olive oil in a small, oven-safe skillet over medium heat. Add diced onion and bell pepper; sauté until softened, about 5-7 minutes.
  2. 2Stir in minced garlic, smoked paprika, and cumin. Cook for 1 minute until fragrant.
  3. 3Pour in crushed tomatoes, season with salt and pepper. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
  4. 4Make a well in the center of the tomato sauce and carefully crack the egg into it.
  5. 5Cover the skillet and cook for 5-8 minutes, or until the egg white is set and the yolk is cooked to your preference.
