- 🧄1 clove garlic, minced
- 🍅½ cup canned crushed tomatoes
- 🫒½ tbsp olive oil
- 🌶️¼ tsp smoked paprika
- 🌿⅛ tsp cumin
- 🧂 salt and black pepper, to taste
- 🌿1 tbsp fresh parsley or cilantro, chopped (for garnish)

Method
- 1Heat olive oil in a small, oven-safe skillet over medium heat. Add diced onion and bell pepper; sauté until softened, about 5-7 minutes.
- 2Stir in minced garlic, smoked paprika, and cumin. Cook for 1 minute until fragrant.
- 3Pour in crushed tomatoes, season with salt and pepper. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
- 4Make a well in the center of the tomato sauce and carefully crack the egg into it.
- 5Cover the skillet and cook for 5-8 minutes, or until the egg white is set and the yolk is cooked to your preference.
- 6Garnish with fresh parsley or cilantro and serve immediately.
