- 🍚2 cup thick poha (flattened rice)
- 🟢½ cup fresh or frozen green peas
- 🧅1 medium onion, finely chopped
- 🫚½ inch ginger, grated
- 🌶️1 green chili, slit (or to taste)
- 💛¼ tsp turmeric powder
- 🌰½ tsp mustard seeds
- 🌿10 curry leaves
- 🌻2 tbsp oil
- 🍋1 tbsp lemon juice
- 🌿2 tbsp fresh coriander, chopped, for garnish
- 🥜¼ cup roasted peanuts, for garnish
- 🧂 salt, to taste

- To prevent poha from becoming sticky, ensure it's not over-rinsed. It should be soft but still separate.
- For extra flavor, add a pinch of sugar while cooking to balance the spices.
- Adjust the green chili to your preferred spice level, or omit for a milder version.
- You can add other vegetables like diced potatoes or carrots along with the peas for more nutrition.
Method
- 1Rinse the poha gently under running water for 1-2 minutes until soft but not mushy. Drain thoroughly and set aside.
- 2Heat oil in a large pan or kadai over medium heat. Add mustard seeds and let them splutter.
- 3Add curry leaves, chopped onion, grated ginger, and green chili. Sauté until the onion turns translucent.
- 4Stir in the green peas and turmeric powder. Cook for 3-5 minutes until the peas are tender.
- 5Add the drained poha and salt to taste. Mix gently to combine, ensuring the turmeric colors the poha evenly.
- 6Cover the pan and cook on low heat for 2-3 minutes to allow the flavors to meld and the poha to steam.
- 7Remove from heat, drizzle with lemon juice, and fluff gently with a fork.
- 8Garnish with fresh coriander and roasted peanuts before serving hot.
