- 🟢½ cup green peas
- 🫛¼ cup green beans, chopped
- 🧄1 tbsp ginger-garlic paste
- 🧡½ tsp turmeric powder
- 🌶️1 tsp red chili powder
- 🌿1 tsp garam masala
- 🧈2 tbsp ghee or oil
- 💧2 cups water
- 🌿¼ cup fresh coriander, chopped
- 🧂 salt, to taste
Pro tips
- For extra flavor, add whole spices like bay leaf, cinnamon stick, and cardamom pods to the oil before adding onions.
- Adjust the spice levels to your preference by varying the amount of red chili powder.
- Serve hot with raita, pickle, or a simple salad for a complete meal.
Method
- 1Rinse basmati rice thoroughly and soak in water for 20 minutes. Drain well.
- 2Soak soya chunks in hot water for 10-15 minutes until soft. Squeeze out excess water and set aside.
- 3Heat ghee or oil in a large pot or pressure cooker. Add sliced onions and sauté until golden brown.
- 4Add ginger-garlic paste and sauté for another minute until fragrant.
- 5Stir in diced carrot, green peas, green beans, and soaked soya chunks. Cook for 3-5 minutes.
- 6Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 2 minutes.
- 7Add the drained basmati rice and water. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes (or 1 whistle in a pressure cooker) until rice is cooked and water is absorbed.
- 8Fluff the pulao gently with a fork. Garnish with fresh chopped coriander before serving.
