Ingredients

  • 🍚1 cup basmati rice
  • 🫘1 cup soya chunks
  • 🧅1 onion, sliced
  • 🥕1 carrot, diced
  • 🟢½ cup green peas
  • 🫛¼ cup green beans, chopped
  • 🧄1 tbsp ginger-garlic paste
  • 🧡½ tsp turmeric powder
  • 🌶️1 tsp red chili powder
  • 🌿1 tsp garam masala
  • 🧈2 tbsp ghee or oil
  • 💧2 cups water
  • 🌿¼ cup fresh coriander, chopped
  • 🧂 salt, to taste

  • For extra flavor, add whole spices like bay leaf, cinnamon stick, and cardamom pods to the oil before adding onions.
  • Adjust the spice levels to your preference by varying the amount of red chili powder.
  • Serve hot with raita, pickle, or a simple salad for a complete meal.

Method

  1. 1Rinse basmati rice thoroughly and soak in water for 20 minutes. Drain well.
  2. 2Soak soya chunks in hot water for 10-15 minutes until soft. Squeeze out excess water and set aside.
  3. 3Heat ghee or oil in a large pot or pressure cooker. Add sliced onions and sauté until golden brown.
  4. 4Add ginger-garlic paste and sauté for another minute until fragrant.
  5. 5Stir in diced carrot, green peas, green beans, and soaked soya chunks. Cook for 3-5 minutes.
  6. 6Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 2 minutes.
  7. 7Add the drained basmati rice and water. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes (or 1 whistle in a pressure cooker) until rice is cooked and water is absorbed.
  8. 8Fluff the pulao gently with a fork. Garnish with fresh chopped coriander before serving.
