Ingredients

  • 🥛2 cup buttermilk
  • 💧½ cup water
  • 🫚1 inch ginger, grated
  • 🌶️1 green chili, finely chopped
  • 🍃¼ cup fresh mint leaves, chopped
  • 🌿¼ cup fresh coriander leaves, chopped
  • 🌰½ tsp cumin powder
  • 🧂¼ tsp black salt
  • 🧂¼ tsp table salt
  • ½ tsp mustard seeds
  • 🧅¼ tsp asafoetida (hing)
  • 🌿5 curry leaves
  • 🧈1 tsp ghee or oil

Method

  1. 1Combine buttermilk, water, grated ginger, chopped green chili, mint, coriander, cumin powder, black salt, and table salt in a blender.
  2. 2Blend until all ingredients are well combined and the mixture is smooth. Set aside.
  3. 3Heat ghee or oil in a small pan over medium heat for tempering.
  4. 4Add mustard seeds and allow them to splutter. Then add asafoetida and curry leaves, sautéing for a few seconds until fragrant.
  5. 5Pour the hot tempering mixture into the blended buttermilk mixture.
  6. 6Stir well to combine the tempering with the chaas.
  7. 7Chill the chaas in the refrigerator for at least 30 minutes before serving.
  8. 8Serve cold, garnished with a sprig of fresh mint or coriander if desired.
