Ingredients

  • 🌱2 cup sprouted moong (green gram)
  • 🥒1 cucumber, finely chopped
  • 🍅1 tomato, finely chopped
  • 🧅½ red onion, finely chopped
  • 🌿¼ cup fresh coriander, chopped
  • ❤️¼ cup pomegranate seeds
  • 🌶️1 green chili, minced (optional)
  • 🍋1 lemon, juiced
  • 🧂½ tsp chaat masala
  • 🧂 salt and black pepper, to taste

  • Adjust the spice level by increasing or decreasing the green chili.
  • Prepare all ingredients in advance and mix just before serving to maintain freshness.

Method

  1. 1If using fresh sprouts, ensure they are properly rinsed. If desired, you can lightly steam or blanch the sprouts for 2-3 minutes to soften slightly, then cool.
  2. 2In a large mixing bowl, combine the sprouted moong, chopped cucumber, tomato, red onion, fresh coriander, and pomegranate seeds.
  3. 3Add the minced green chili (if using), freshly squeezed lemon juice, and chaat masala.
  4. 4Season with salt and black pepper to taste. Start with a small amount and adjust as needed.
  5. 5Gently toss all the ingredients together until well combined and coated with the dressing.
  6. 6Serve immediately as a healthy snack or a light side dish.
