- 🌱2 cup sprouted moong (green gram)
- 🥒1 cucumber, finely chopped
- 🍅1 tomato, finely chopped
- 🧅½ red onion, finely chopped
- 🌿¼ cup fresh coriander, chopped
- ❤️¼ cup pomegranate seeds
- 🌶️1 green chili, minced (optional)
- 🍋1 lemon, juiced
- 🧂½ tsp chaat masala
- 🧂 salt and black pepper, to taste

Method
- 1If using fresh sprouts, ensure they are properly rinsed. If desired, you can lightly steam or blanch the sprouts for 2-3 minutes to soften slightly, then cool.
- 2In a large mixing bowl, combine the sprouted moong, chopped cucumber, tomato, red onion, fresh coriander, and pomegranate seeds.
- 3Add the minced green chili (if using), freshly squeezed lemon juice, and chaat masala.
- 4Season with salt and black pepper to taste. Start with a small amount and adjust as needed.
- 5Gently toss all the ingredients together until well combined and coated with the dressing.
- 6Serve immediately as a healthy snack or a light side dish.
