Ingredients
- 🥩500 g sirloin steak
- 🥔500 g baby potatoes
- 🥬200 g mixed greens
- 🧅1 red onion
- 🍅150 g cherry tomatoes
- 🫒¼ cup olive oil
- 🍷2 tbsp red wine vinegar
- 🍯1 tbsp Dijon mustard
- 🧄1 clove garlic
- 🧂 salt and black pepper, to taste

Method
- 1Preheat oven to 200°C (400°F). Halve the baby potatoes, toss with 1 tbsp olive oil, salt, and pepper. Roast for 25-30 minutes until tender and golden.
- 2Pat the sirloin steak dry, season generously with salt and pepper. Heat 1 tbsp olive oil in a cast-iron skillet over medium-high heat.
- 3Sear steak for 3-5 minutes per side for medium-rare, or until desired doneness. Remove from skillet, tent with foil, and rest for 5-10 minutes.
- 4While steak rests, whisk together remaining olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper for the dressing.
- 5Thinly slice the red onion and halve the cherry tomatoes. Slice the rested steak against the grain into thin strips.
- 6In a large bowl, combine mixed greens, sliced red onion, cherry tomatoes, roasted potatoes, and sliced steak.
- 7Drizzle the dressing over the salad ingredients and toss gently to combine.
