Ingredients

  • 🥩500 g sirloin steak
  • 🥔500 g baby potatoes
  • 🥬200 g mixed greens
  • 🧅1 red onion
  • 🍅150 g cherry tomatoes
  • 🫒¼ cup olive oil
  • 🍷2 tbsp red wine vinegar
  • 🍯1 tbsp Dijon mustard
  • 🧄1 clove garlic
  • 🧂 salt and black pepper, to taste

Method

  1. 1Preheat oven to 200°C (400°F). Halve the baby potatoes, toss with 1 tbsp olive oil, salt, and pepper. Roast for 25-30 minutes until tender and golden.
  2. 2Pat the sirloin steak dry, season generously with salt and pepper. Heat 1 tbsp olive oil in a cast-iron skillet over medium-high heat.
  3. 3Sear steak for 3-5 minutes per side for medium-rare, or until desired doneness. Remove from skillet, tent with foil, and rest for 5-10 minutes.
  4. 4While steak rests, whisk together remaining olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper for the dressing.
  5. 5Thinly slice the red onion and halve the cherry tomatoes. Slice the rested steak against the grain into thin strips.
  6. 6In a large bowl, combine mixed greens, sliced red onion, cherry tomatoes, roasted potatoes, and sliced steak.
  7. 7Drizzle the dressing over the salad ingredients and toss gently to combine.
