Ingredients
- 🧊250 g firm tofu, pressed and cubed
- 🧀200 g paneer, cubed
- 🧅1 medium onion, cut into chunks
- 🫑1 medium bell pepper (any color), cut into chunks
- 🥛150 g plain yogurt
- 🍋2 tbsp lemon juice
- 🧄1 tbsp ginger-garlic paste
- 🌶️1 tsp garam masala
- 💛1 tsp turmeric powder
- 🔥1 tsp kashmiri red chili powder
- 🤎½ tsp cumin powder
- 🌿½ tsp coriander powder
- 🧂1 tsp salt
- 🌻2 tbsp oil, plus more for brushing
- 🥢 skewers, soaked if wooden
- 🍃 fresh cilantro, chopped (for garnish)
Pro tips
- Pressing the tofu thoroughly removes excess water, allowing it to absorb the marinade better and achieve a firmer texture.
- If using wooden skewers, remember to soak them in water for at least 30 minutes before use to prevent burning.
- For a smoky flavor without a grill, you can use a stovetop grill pan or broil them in the oven, adding a pinch of smoked paprika to the marinade.
Method
- 1In a large bowl, whisk together yogurt, lemon juice, ginger-garlic paste, garam masala, turmeric, chili powder, cumin, coriander, salt, and 2 tbsp oil to make the marinade.
- 2Add cubed tofu, paneer, onion chunks, and bell pepper chunks to the marinade. Gently toss to coat everything evenly. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator).
- 3Thread the marinated tofu, paneer, onion, and bell pepper pieces onto the skewers, alternating them for visual appeal.
- 4Preheat your grill or broiler to medium-high heat. Lightly brush the skewers with oil.
- 5Grill or broil the skewers for 10-15 minutes, turning occasionally, until they are nicely charred and cooked through. Brush with a little more oil if they seem dry.
- 6Remove from heat, garnish with fresh cilantro, and serve hot.
