Ingredients
- ⬜400 g extra-firm tofu
- 🍦200 g plain dairy-free yogurt
- 🧅1 red onion
- 🫑1 green bell pepper
- 🌶️1 red bell pepper
- 🧄1 tbsp ginger-garlic paste
- 🌰1 tsp ground cumin
- 🌿1 tsp ground coriander
- 💛½ tsp turmeric powder
- 🧂½ tsp garam masala
- 🌶️½ tsp red chili powder
- 🍋1 tbsp lemon juice
- 🌻1 tbsp vegetable oil
- 🧂 salt and black pepper, to taste
- 🌿2 tbsp fresh cilantro, chopped
Pro tips
- For extra smoky flavor, add a pinch of smoked paprika to the marinade.
- Serve with a side of mint chutney or a refreshing cucumber raita.
- These skewers can also be baked in an oven at 400°F (200°C) for 20-25 minutes, flipping halfway.
Method
- 1Press tofu for 20-30 minutes to remove excess water, then cut into 1-inch cubes. If using wooden skewers, soak them in water for at least 30 minutes.
- 2In a large bowl, whisk together dairy-free yogurt, ginger-garlic paste, ground cumin, ground coriander, turmeric, garam masala, red chili powder, lemon juice, vegetable oil, salt, and black pepper to create the marinade.
- 3Add the tofu cubes to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.
- 4Cut red onion and bell peppers into 1-inch pieces. Once tofu is marinated, thread the tofu, onion, and bell pepper pieces alternately onto the skewers.
- 5Preheat a grill or grill pan to medium-high heat. Lightly oil the grill grates.
- 6Grill the skewers for 10-15 minutes, turning occasionally, until the tofu is golden brown and the vegetables are tender-crisp with nice char marks.
- 7Remove from heat, garnish with fresh chopped cilantro, and serve immediately.
