Ingredients

  • 🌾1 cup foxtail millet
  • 🧅1 onion, large
  • 🫚1 inch ginger
  • 🧄3 cloves garlic
  • 🥕½ cup mixed vegetables (carrots, peas, green beans)
  • florets½ cup cauliflower florets
  • 🧀½ cup paneer, cubed
  • 🌰¼ cup cashews
  • 🍦½ cup plain yogurt
  • 🥥½ cup coconut milk
  • 🌶️1 tsp korma powder
  • 🟠½ tsp turmeric powder
  • 🧈2 tbsp ghee or oil
  • 🧂 salt, to taste
  • 🌿¼ cup fresh coriander, chopped

Pro tips

  • For extra richness, a pinch of saffron soaked in warm milk can be added to the korma during the last 5 minutes of cooking.
  • Adjust spice levels by increasing or decreasing korma powder, or adding a touch of green chili paste with the ginger-garlic.
  • Don't overcook the vegetables; they should be tender but still have a slight bite for texture contrast.
  • If you don't have paneer, firm tofu can be used as a vegan alternative.

Method

  1. 1Rinse foxtail millet thoroughly and cook according to package instructions. Usually 1 cup millet to 2 cups water, simmered until water is absorbed and millet is tender (about 15-20 mins).
  2. 2Soak cashews in warm water for 15 minutes, then blend with a little water to form a smooth paste. Roughly chop onion, ginger, and garlic; blend into a fine paste.
  3. 3Heat ghee or oil in a large pot or karahi over medium heat. Sauté the onion-ginger-garlic paste until golden brown, about 5-7 minutes.
  4. 4Add korma powder and turmeric powder, stir for 1 minute until fragrant. Add mixed vegetables and cauliflower florets, cook for 5 minutes, stirring occasionally.
  5. 5Whisk yogurt and coconut milk together. Add to the pot along with the cashew paste and salt. Mix well and bring to a gentle simmer.
  6. 6Add paneer cubes to the korma. Cover and cook on low heat for 10-15 minutes, or until vegetables are tender and the gravy has thickened to your desired consistency.
  7. 7Garnish with fresh chopped coriander. Serve the vegetable korma hot alongside the cooked foxtail millet.
