Ingredients
- 🥣1 cup rolled oats
- 🟢¼ cup peas
- 🥕¼ cup carrots, finely chopped
- 🧅¼ cup onions, finely chopped
- 🌶️1 green chili, slit
- 🫚½ tsp ginger, grated
- ⚫½ tsp mustard seeds
- 🌿½ tsp cumin seeds
- 🍃5 curry leaves
- 🌻1 tbsp vegetable oil
- 💧2 cups water
- 🧂 salt, to taste
- 🌿1 tbsp fresh coriander, chopped
Pro tips
- For extra crunch, add a handful of roasted peanuts or cashews at the end.
- Feel free to add other vegetables like bell peppers or green beans for more nutrition.
- Adjust the amount of green chili according to your spice preference.
Method
- 1Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- 2Add chopped onions, green chili, and grated ginger. Sauté until onions turn translucent.
- 3Stir in the chopped carrots and peas. Cook for 2-3 minutes until slightly tender.
- 4Add the rolled oats to the pan and dry roast for 2-3 minutes until fragrant, stirring continuously.
- 5Pour in the water and add salt to taste. Bring the mixture to a boil.
- 6Reduce heat to low, cover the pan, and simmer for 5-7 minutes, or until the oats are cooked and have absorbed all the water.
- 7Gently fluff the upma with a fork. Garnish with fresh coriander.
- 8Serve hot and enjoy your wholesome breakfast!
