Ingredients

  • 🍚2 cup all-purpose flour
  • 🧈¼ cup ghee or vegetable oil
  • 🌱1 tsp carom seeds (ajwain)
  • 🥔1 medium potato, boiled and mashed
  • 🟢½ cup green peas, cooked
  • 🧅½ onion, finely chopped
  • 🧄1 tbsp ginger-garlic paste
  • 🌶️1 tsp garam masala
  • 🟠½ tsp turmeric powder
  • 🌶️½ tsp red chili powder
  • 🥭½ tsp dry mango powder (amchur)
  • 🧂 salt, to taste
  • 🌿2 tbsp fresh coriander, chopped

Pro tips

  • Ensure the dough is firm; if it's too soft, the samosas won't be crispy.
  • Do not overfill the samosas, as they may burst during baking.
  • For extra crispiness, brush with a little oil before baking.
  • Experiment with other vegetables like carrots or paneer in the filling.

Method

  1. 1For the dough, combine flour, ghee/oil, carom seeds, and salt. Gradually add water and knead into a firm, smooth dough. Cover and let rest for 15-20 minutes.
  2. 2For the filling, heat a little oil in a pan. Sauté chopped onion until translucent, then add ginger-garlic paste and cook for a minute.
  3. 3Add mashed potato, green peas, garam masala, turmeric, red chili powder, amchur, and salt. Mix well and cook for 5-7 minutes. Stir in fresh coriander and let cool.
  4. 4Preheat oven to 375°F (190°C). Divide the dough into equal portions. Roll each portion into an oval shape and cut in half to form two semicircles.
  5. 5Take one semicircle, moisten the straight edge with water, and fold to form a cone. Fill with the potato mixture and seal the edges to form a samosa.
  6. 6Place samosas on a baking sheet lined with parchment paper. Lightly brush with oil or milk for a golden finish.
  7. 7Bake for 20-25 minutes, or until golden brown and crisp, flipping halfway through.
  8. 8Serve hot with your favorite chutney or dipping sauce.
