Ingredients
- 🍚1 cup rava (sooji / semolina)
- 🧈2 tsp ghee or oil
- ⚫½ tsp mustard seeds
- 🥣½ tsp urad dal (split black lentils)
- 🧅¼ cup finely chopped onion
- 🥕¼ cup finely chopped carrot
- 🟢¼ cup green peas
- 🌶️1 green chili, slit
- 🍃 curry leaves
- 💧2 ½ cups water
- 🧂½ tsp salt
- 🌿2 tbsp chopped coriander leaves
Pro tips
- Ensure your rava is roasted well for a non-sticky and flavorful upma.
- For extra richness, you can add a tablespoon of cashews or peanuts during the tempering stage.
- Adjust the amount of water as per your desired consistency; some prefer it softer, some firmer.
Method
- 1Heat a heavy-bottomed pan and dry roast the rava (semolina) on medium-low heat until it turns light golden and aromatic. Transfer to a plate and set aside.
- 2In the same pan, heat ghee or oil. Add mustard seeds and let them splutter. Then add urad dal and fry until light brown.
- 3Add chopped onion, green chili, and curry leaves. Sauté until the onion turns translucent.
- 4Stir in the chopped carrot and green peas. Cook for 2-3 minutes until slightly tender.
- 5Pour in the water and add salt. Bring the mixture to a rolling boil.
- 6Reduce the heat to low. Slowly add the roasted rava in a thin stream, stirring continuously with one hand to prevent lumps.
- 7Cover the pan with a lid and cook on low heat for 5-7 minutes, or until all the water is absorbed and the rava is cooked through.
- 8Remove from heat, fluff with a fork, and garnish with fresh coriander leaves.
